Despite what it may look like at first glance, this glorious fish dish is slowly cooked Skate Wing with tomato confit, cucumber and tapioca pearls in a sauce of lightly spiced infused whipped coconut milk and lemon thyme. Very delicate in taste and the crispy textural contrast between the wing and the sauce and confit is glorious.
